Even from the start, it was <strong>all about the food<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We met in a bakery in Playa del Carmen in 2016, and our romance blossomed quickly. In 2017 we moved to El Cuyo, Yucatan and found our first place together and <strong>by 2018, we&#8217;d opened El Chile Gordo restaurant<\/strong>. The \u00e1 la carte menu was an instant success. We were making waves!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then in March 2020, due to COVID, El Cuyo closed its doors to tourists, and we were left with little choice but to close ours too. So, in the middle of a pandemic &#8211; when most people wanted to keep their distance &#8211; that is exactly what we decided to do. Crazily, it worked.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">People frequently ask if we\u2019d ever return to a conventional restaurant format. The answer? Definitely not!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We are passionate about<strong> showcasing<\/strong> the <strong>enormous variety of Mexican gastronomy<\/strong>, chatting with our guests, and explaining the dishes. Plus, seeing strangers create memories and bond over good food is the very <strong>essence of Mexican cuisine<\/strong>!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A New Chapter<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">In 2025, after seven successful years in El Cuyo, we decided it was time to shake things up. We were ready for a new challenge.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We moved to the beautiful walled city of <strong>Campeche <\/strong>&#8211; a <strong>UNESCO <\/strong>World Heritage Site. Here we&#8217;ve transformed a colonial era house into our <strong>bespoke &#8216;chef&#8217;s table&#8217; dining venue<\/strong>. Oscar has a t<strong>raditional outdoor smokehouse<\/strong>, plus a dedicated <strong>open plan kitchen-dining<\/strong> area at the heart of the house.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We&#8217;re really looking forward to writing this next chapter of the El Chile Gordo story.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Our Roots<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oscar<\/strong>, originally from Veracruz, developed a passion for cooking at a young age, <strong>learning traditional recipes from his mother and aunts<\/strong>. Despite his love for food, he pursued a career in graphic design, before moving to Quintana Roo and finding success as an artisan. He took two years out to travel across the American continent in a jeep and on his return to Mexico, he met Cathy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cathy<\/strong>, hailing from &#8216;cold and wet&#8217; Yorkshire in the UK, <strong>worked <\/strong>across Europe<strong> in tourism<\/strong> before moving to Mexico. She became an English teacher and took a year-long post in Playa del Carmen. She was busy planning her solo travels through Central and South America when she met Oscar.
